Tokyo-born
head chef Raita Noda comes from three generations of restaurant-owners and since
re-locating to Australia in 1990 has become one of Sydney’s most highly-acclaimed
Japanese chefs.
After his apprenticeship at Matsukaze restaurant at Chifley
Plaza, Raita became chef de partie at Unkai at the ANA Hotel. However it was
in his capability head chef of Rise – the Japanese foodie haunt in Surry Hills
- that Raita really showed his mettle as a world-class chef, winning the restaurant
a coveted chefs hat and numerous awards. Headhunted by management who’d
fallen for his creative approach to seafood, Noda was appointed as head chef
at Ocean Room, transforming the restaurant into one of Sydney’s best-known restaurants.
Raita’s
new menu offers modern Japanese creations inspired by the sea and is a commitment
to recreating traditional Japanese cuisine for the modern, discerning diner. |
